Easy Madeleine Recipe – a family favorite

Hello there,

Today I would like to share with you our family favorite Madeleine recipe. It is quick and surprisingly easy to make. It’s my go-to cookie when I have guests. Here’s what you need:

Ingridients:

3 eggs

1/2 cup sugar

1 cup (120 g) flour

1 tsp orange zest

1 tsp baking powder

¼ tsp salt

6 tbsp melted butter

2 tbsp powdered sugar for dusting

How to:

Beat the eggs with sugar until pale yellow. Add zest. Add the dry ingredients to the egg mixture and whisk gently, until just combined. Then add melted butter. You need to refrigerate the batter at least 30 minutes so your cookie will rise and get that “hump” that this French dessert is known for!  You can cover with cling film and keep it in the fridge overnight ready to bake in the morning for a delicious breakfast treat. Using a pastry brush coat lightly a non-stick Madeleine pan with some melted butter, lightly grease each well. Spoon 1 tbsp of batter into the center of the well and don’t try and spread the batter. It will spread out by itself and keep a more uniform shape that way. Bake 7-8 mins until slightly golden around the edges and centers look set and a slight hump has appeared.

Allow the cookies to cool slightly and remove from the tin and allow to cool down completely before you go ahead and dust with powdered sugar. These are best eaten the day they are made…in my house, they disappear in less than an hour. The batter can be made up 2 days ahead of time. Enjoy!
